Tonight was a special treat. Well kind of. We didn't run last night because we ran out of day and then Windy had to work so we pushed off yesterday what we could do today. Steve was gracious enough to offer to watch ALL the children so that Matt could join Windy and I for the run. All three of us are going to run it together along with my oldest niece (if she is up to it after spending the week before in Cancun). So it was a good chance for us to get together and see how each of us runs. The reason I say it was a special treat because it was Windy and Matt's first chance to run together in years. And the reason I say kind of is because he was a real pest. He kept bumping into Windy and just being a real pain. In the end though he did run ahead (the guy is 6'4" and has freaky long legs) and we finally got to run in peace. We finished slower than we wanted but it was a good pace for us. We hadn't run that far in a long time so it was nice to finish about 13 minute miles. ;)

Then we all came back to our house where I had meatballs roasting in a crock pot and we had a great dinner of spaghetti and meat balls. Well I had rice with meatballs but it was still really good. Everyone raved about the meatballs and I have to give credit where it is due. I first made these when we went to Texas, I needed something that would feed a lot and in a hurry my friend from work Alicia gave me her recipe. It was really nice to see the same reaction here that my family had down there. Only this time I used plain oats instead of Maple and Brown Sugar Instant Oatmeal (that's a story for another time). Here is the recipe (in case you want to try it):
Meatballs:
2 lbs of ground beef
2 eggs
seasoning (we used Montreal Steak because we love it)
1 cup of Oats
Roll into balls (about an inch in diameter, smaller if you want)
Sauce:
In your crock pot put in a big bottle (2 lbs) of Spaghetti Sauce (we use Ragu because I can eat it)
Add 2 cans of diced tomato's
and 2 cans of tomato paste
Throw in meat balls and put the lid on. Let sit in the crock pot on high without stirring for about two hours then stir a little over time until meatballs are done (I usually cook them for a total of 4-5 hours)
You can do this over the stove and it works just the same only put it on medium so it doesn't boil over.
Add noodles (or rice in my case) and you are good to go. Very yummy!
